No-bake choco-date brownies

All ingredients

2 persons +
  • dates * 320 g
  • dark chocolate * 100 g
  • butter 100 g
  • oatmeal 60 g
  • almond nuts 90 g
  • walnut 110 g
  • dried cranberries 100 g
  • grated coconut 2 el
  • orange juice * 3 el
  • cocoa powder * 90 g
  • coconut milk * 180 ml
  • coconut oil 70 ml

Let's get started

Preparation base

  1. Chop the dates and soak them in 0.5 liters of boiling water for 5 minutes. Drain the water afterward.

  2. Melt the chocolate in a bain-marie. 

  3. Melt the butter and mix with oats and orange juice. 

  4. Blend almonds and 2/3 of the walnuts in a food processor. 

  5. Add the melted chocolate, drained dates and oat-butter mix. Blend until sticky. Add a bit more orange juice if the mixture is too dry. 

  6. Stir in the cranberries and the remaining chopped walnuts. 

Assembly

  1. Line a square tin (approx. 20 cm) with baking paper. 

  2. Press the dough firmly into the tin and smooth the surface. 

  3. Optional icing: Blend dates, cocoa, coconut milk, and coconut oil until smooth and creamy. Pour this over the brownie and spread it evenly.

    Not a fan of icing? No worries, you can skip this step. The no-bake chocolate-date brownies will still be just as delicious. You can also use nuts for extra variety.

Finishing

  1. Sprinkle with shredded coconut. 

  2. Chill at least 2 hours (preferably 3 hours). 

  3. Cut into squares and serve!
